You know summer is upon is when we’re throwing as many dinner parties your way as possible (hi, Hamptons inspired dinner!). And who better to inspire us today than a team of event pros themselves? Alison Events Planning + Design and their team have a big emphasis on community within the industry, so their latest dinner party hosted in collaboration with Fogcutter Catering at Stable Café was all about bringing new and old friends together. Alison tells it, For this event we partnered with Fogcutter Catering, who I met at a hospitality conference I was speaking at in LA. We also brought on board the talented Sammy Go of Lambert Floral Studio to produce the floral design and Found Vintage Rentals to supply all the furniture. We had such a fantastic time partnering with new and familiar vendors, deepening existing relationships and starting new ones with open eyes and a clean slate. It was so fun to bring together a wonderful group of people to celebrate the start of a new season and to launch the forthcoming wedding season with high spirits and much celebration.

Chef Guillermo’s inspiration behind the menu… I love octopus, but many clients aren’t familiar, or think it’s too unique for their guests who may want something safer… I love the Spanish approach to squid and octo, which is often served with chickpeas and chorizo. Octopus itself is so striking on the plate, but I like to serve thin slices of tentacle arranged like a carpaccio. I added dried chorizo crisps to complement the chewy octo, and it being spring, I wanted to incorporate both fresh + fried chickpeas. Unfortunately there weren’t any fresh at the farmers’ market that week. Instead, we used sweet English peas and they provided the green freshness I wanted. Along with dots of spicy espelette aioli for fat, tangy sumac, and fried papadum crisps, the final dish came out really balanced and full-flavored.

Fogcutter loved the idea of placing an emphasis on a spring menu, considering it’s such a special time of year for the industry. Stable Café’s indoor-outdoor space helped them channel the intimate spring vibe. Venue is key, guys!
