thank you for these clear directions & beautiful photos. i'm so excited to try making my own "naked" wedding cake for my 10th anniversary this fall. it will be dairy and wheat free, but flavorful & beautiful, i am sure! thanks for the help & the inspiration! can't wait to start picking flavors and flowers!

Hi Kristen, This cake is best served the day it is assembled. Because the "naked" cake layers are exposed to the elements, it can dry out more quickly than frosted cakes. It is best not to refrigerate either as that will expedite the drying process. Emily prepares her naked cakes as close to service as possible. If you are making one for a small gathering, I'd put it together the day-of, however it's okay to bake the cake a day or so ahead of time as long as you wrap it air-tight to keep it fresh. Hi everyone! I would like to thank Ashley and Cathy for bringing this important step to everyone's attention! We definitely goofed in our DIY and forgot to include this very important step. I am so sorry. It is very important to always wrap the floral stems in floral tape before inserting into the cake to prevent any pesticides from entering. You can also purchase stem holders from your bakery supply or crafting store. Using organic flowers that have not been treated by pesticides is also advisable, but please always take caution to protect the stems from leaking into the cake. I sincerely apologize for any confusion or alarm.

Hi there! Let me first start by saying that this cake is lovely! As a fellow fresh flower cake maker, I truly can appreciate the beauty of a cake like this. � I am writing only because i worry about the practice in which the flowers are applied. Mums are fairly poisonous and should not be directly inserted into a cake. If they leach into the cake, it should not be consumed. � Though I would not recommend mums for cakes, at the very least they should be wrapped in floral tape before being inserted in the cake. Using fresh flowers is a wonderful way to create a simple, yet whimsical cake, but be sure to exercise caution with the flowers chosen and always be sure to cover them so no part of the flower actually leaches into the cake people will consume. I hope you do not find this comment offensive, nor do i expect it to be posted. I love Cakewalk's work and 100 Layer Cake, I just hope that maybe you could revise the text to exercise caution for those looking for a DIY project.

Isn't it poor practice to use non-edible flowers in a cake that is meant to be eaten? You can't really eat the cake or the frosting after the residues and the chemicals from the cut flower stems seep into it--while the cake is beautiful, using edible flowers might be a bit more useful and/or realistic. Am I mistaken?
