Hello again! Scott and I are back to share the continuation of our five-year-moon trip to the Caribbean. If you missed our first stop to Anguilla you can view it here and here. Ahhh, ok so this is us we arrived in the colorful island of St Barths. After a semi-rough 45 min boat ride from Anguilla, we docked in one of the prettiest scenic islands I’ve ever seen. With lush and tropical rolling hills, exotic sailboats, and colorful plantation style architecture, you instantly feel like you’ve washed up onto the European shore.

After a 20 minute drive outside of town and up through the lush hills, we arrived at Hotel Le Toiny. Perfect romantic getaway? This. Is. It. The villas are private, exclusive, and oh so dreamy. When you enter the resort you walk through the famous Le Gaiac Restaurant and straight to the terrace that overlooks the ocean… with an infinity pool. Um, hello breathtaking!!!

When you’re in St Barths you kind of get the sense, because of it’s French flavor, that you could eat your way through the island. Our first night in St Barths we enjoyed a mouth watering 3 course wine paring dinner at Hotel Carl Gustaf at Victoria’s Restaurant. Every presentation of food was magnifique! Doesn’t this just get your tastebuds all excited?!

There are a ton of beaches you can travel to all over the island. Nikki Beach, closer to town, is the only beach where you can get food & drinks right on the beach. It’s also really popular with tourists, so we decided to go a bit off the map and head to Gouverneur Beach. Le Toiny packed us the ultimate picnic of yummy foods, umbrellas, beach chairs, towels, and snorkeling equipment so we were set. We spent the whole day relaxing in the crystal clear water, reading and salivating over the bites they prepared. Yum, right? This is what I’m talking about when I say you can eat your way through the island… more yummy food.

It wasn’t all beach and laying around. We got a little adventurous on the trip, look! Katie chartered a boat for us (which you must do), and we took to the seas for snorkeling and a bit of unexpected cliff jumping! Below Jen Huang took a leap of faith and plunged into the water. It was so thrilling!!! When it came to my turn Scott’s little pep talk went a little something like this, “Jump Jillian! Make Liam (our son) proud!”.

Lastly, because food was the main focus of our trip, our last meal was spent watching the sunset over St Barths at  the Le Gaiac Restaurant. I can’t even tell you how amazing it was. I leave you with this picture of our parmesan spaghetti and black truffle pasta. I think that says it all.
